<p>remarkable 2010 Olympic Winter Games. Now Canada’s westernmost province is set to celebrate once again with the arrival of the Paralympic Winter Games in Vancouver and Whistler.</p>
<p>From March 12 &#8211; 21, disabled athletes from around the world will compete for medals in five winter sport disciplines. British   Columbia welcomes visitors and spectators to witness these amazing feats of athleticism and to experience some of the many activities the destination has to offer.</p>
<p>Popular pavilions &#8211; including the British Columbia Canada Pavilion at the Vancouver Art Gallery – will re- open their doors, and LiveCity Sites in Vancouver and Whistler will come alive again with free music and entertainment.</p>

<p>The Vancouver 2010 Olympic and Paralympic Winter Games have already seen Canadian gold: the first two gold</p>

<p>medals ever won at home. Olympic hosts were overjoyed when British Columbian snowboarder <a href="http://www.destination2010.ca/content/finishedarticles/my-town-ma%C3%ABlle-ricker" target="_blank">Maëlle Ricker</a> claimed gold in snowboard cross. Born in North   Vancouver, the two-time Olympian, known as Mighty Mouse, won sport&#8217;s highest prize virtually in her own back yard. Just two days earlier, Quebec-born freestyle skier Alexandre Bilodeau gave a Valentine&#8217;s gift to the nation when he placed first in the men&#8217;s moguls on February 14th.</p>
<p>Ever since the Opening Ceremonies, when a line-up of Canadian A-listers, including an unforgettable k.d. lang, wowed a viewing audience estimated at more than a billion, Vancouverites have been dancing in the streets &#8212; that is, when they&#8217;re not ziplining across them &#8212; pushing aside that traditional Canadian modesty to paint the town maple leaf red.</p>
<p>As the biggest, most scenic, and surely the most culinarily-blessed city ever to host a Winter Olympic Games, Vancouver is buzzing. Fans flow along the downtown pedestrian corridors, checking out the pavilions and country</p>

<p>houses, and filling celebration sites to capacity. Whistler Village has become one big party zone, with six celebration sites bringing top bands and non-stop entertainment to the mountain village. In Richmond, just south of Vancouver, fans flock to the O Zone &#8211; the biggest celebration site of the Games &#8211; for a host of free family-friendly programming and entertainment. Restaurants and pubs in all three cities report booming business, while souvenirs are flying off the shelves. Hot items? Those iconic red mittens.</p>
<p>And we&#8217;re not just winning on the slopes. On February 16, the Vancouver Olympic and Paralympic  Village became the second neighbourhood in the world to receive a LEED (Leadership in Energy and Environmental Design) Platinum Certification – the highest possible green rating. (The first was Dockside Green in Victoria,  BC.)</p>

			<content:encoded><![CDATA[<p>Those who know me well are all too familiar with my love of British Columbia&#8217;s ferries.  I&#8217;m not alone either, as many residents around this spectacular province will agree, we are really fortunate to have the service connecting us to points from one end of the province to the other. Aboard this ferry system, we can visit Vancouver Island, the far North at Prince Rupert and Haida Gwaii, the Gulf Islands and the Sunshine Coast.</p>

<p>Because of my enthusiasm for these vessels, you can imagine my excitement at being invited to attend the Olympic Torch transfer on the well-appointed Coastal Renaissance from Langdale Terminal on the Sunshine Coast, to Horseshoe Bay. It was emotional and exciting and all the good things you’ve read and heard about, being up close to the flame. Hugging and shaking hands with a few of the people who had already carried the torch, then to witness the Olympic Flame being lit on the Coastal Renaissance, I couldn&#8217;t help myself.  I welled up &#8211; for more than just the Olympic experience.  Having lived in Horseshoe Bay on and off during the past ten years, I realized how much I thoroughly enjoy and miss immensely I might add, the sheer delight of simply <em>watching</em> the ferries sail back and forth between Nanaimo and &#8216;my little bay&#8217;. Other than hopping aboard and going somewhere, the next best thing to ferry travel is to watch them travelling the routes, especially from your deck.</p>
<p><strong>Bet You Didn&#8217;t Know</strong></p>
<p>It&#8217;s true &#8211; BC Ferries is one of the largest ferry operators in the world, carrying more than 20 million passengers and 8 million vehicles year-round.  The company, which started out in 1960 with just two ships, celebrates quite a milestone</p>

<p>this year &#8211; BC Ferries is turning 50! And can now boast a fleet of 36 vessels departing from 47 terminals, plus amenities for families with young children such as the Kids Zone and the Video Zone to entertain older kids and their parents too.  Fashionistas will find ‘Passages’ retail boutiques on the larger ships are filled with moderately priced pieces as well as specialty soaps and gifts signifying uniquely BC products. Dining options have grown, and definitely improved, over the years to include not only the famous White Spot Triple-Os (may they never be gone), on all ships there is now a vast selection of fresh and healthy food choices including fruit, vegetables and dips, to yogurts and salads.</p>
<p><strong>All A’Board</strong></p>
<p>What makes the trip so special you ask?  Well, I believe it&#8217;s the cleanliness of the ships and the friendly staff for starters. If the weather is cooperating – travel during the squalls of fall and winter and you know how high those waves can get &#8211; the trip is more often than not, relaxing and incredibly enjoyable.  And set against a soothing palette of grey-greens</p>

<p>Olympic energy could be felt everywhere.  This was a spine tingling occasion for a number of reasons, in particular as Canada’s First Nations are playing such a significant role with the Vancouver Winter Olympics.  This is the first time – ever – that this involvement has taken place within a major, international sporting event.</p>
<p>As I hugged my dear friend, Dr. Linnea Battel &#8211; she&#8217;s the CEO of Xa;yatem Long House Interpretive Centre near Mission and Co-Chair of Aboriginal Tourism BC; it was a very special moment.  I couldn&#8217;t help but think the elders were smiling on this great day. As is her way, Linnea spoke passionately during the ceremony, sharing with the audience how momentous is the occasion of this exhibit and the partnerships between ATBC, Pan Pacific Vancouver and Terasen Gas. &#8220;Aboriginal tourism is the fastest growing sector of our province&#8217;s tourism industry.  We have more than 60 members in our Association, from resorts and wineries to galleries and adventure tours. The calibre of the visitor experience is exceptional and we&#8217;re looking forward to giving the world a taste of what they can experience when they visit.&#8221;  Having reviewed a few, I heartily concur!</p>

<p>Executive Chef Daryle Nagata of Pan Pacific Vancouver shares his version of two delectable aboriginal menu items available at the hotel during the Vancouver Winter Olympics.  Come to the hotel and visit &#8220;Kla-how-ya&#8221; &#8211; Aboriginal Tourism BC&#8217;s vibrant display of First Nations artwork and cultural heritage.  Running from February 12 to 28, 2010, the hotel is accessible only to foot traffic, and transit, by SeaBus, SkyTrain and Canada Line during this time.</p>
<p><strong>Bella Coola Bannock Fry Bread </strong></p>
<p>1 cup milk</p>
<p>1 cup warm water</p>
<p>1 TBSP salt</p>
<p>1 tsp sugar</p>
<p>1 TBSP fresh yeast</p>
<p>6 cups flour</p>
<p>1 egg</p>
<p>1 TBSP shortening</p>
<p><strong>Directions:</strong></p>
<p>In a bowl add 1/4 cup of the warm water and sugar.  Mix to dissolve the sugar and add the yeast.  Cover and let yeast develop for 5 min.</p>
<p>In a separate bowl add flour, make a well and add the remaining warm water, milk, egg, salt, shortening and developed yeast mixture.</p>
<p>Kneed the dough for 10 minutes, cover and let rise for 2 hours in a warm area. Punch down after the first hour and again after the second hour before portioning to desired shape and size.</p>
<p>Fry bannock in a shallow pan of oil until golden brown on both sides.</p>
<p>Bannock bread was originally a Scottish recipe brought over by settlers, trappers and voyagers a few hundred years ago.  You will see many cooking styles of bannock that were developed by the vast array of aboriginal nations across the country.  From fried, baked or roasted on a stick over fire.  Recipes also vary from ones with yeast, baking powder to eggs and wild rice&#8230;YUM!</p>
<p><strong>Wild BC Cedar Plank Salmon</strong></p>
<p>1 cedar plank (6 x 14 inches)</p>
<p>2 salmon fillets (1 1/2 pounds, skin on)</p>
<p>1 cup maple syrup</p>
<p>salt and freshly ground black pepper</p>
<p><strong>Directions:</strong></p>
<p>Soak cedar plank in salted water over night (or a minimum 2 hours), then drain.  Remove any bones from the salmon, rinse salmon under cold running water and pat dry with paper towels.  Marinate in maple syrup for one hour.</p>
<p>Heat oven to 375 degrees.  Generously season the salmon with salt and pepper on both sides.  Lay the salmon skin-side down on the cedar plank.  Bake until firm to the touch in the thickest part of the fish, around 12-15 minutes.  Serve the salmon right off the cedar plank.</p>
<p>Enjoy with a glass of red &#8211; yes, red wine if that is your favourite, or with my choice &#8211; a pinot blanc or sauvignon blanc,  all from British Columbia.</p>

			<content:encoded><![CDATA[<p>For Alberta &#8211; Calgary, Banff and Lake Louise in particular, the thrill of hosting a winter Olympic Games has never faded.</p>

<p>Indeed, over twenty years later (the 1988 Winter Games were held here), BC’s provincial cousin to the east is still a force to reckon with when it comes to hosting the Olympics.  As the excitement is building in British   Columbia, it has never left the hearts of Albertans.</p>
<p>Lake Louise is a shining example as I quickly found out on a quest seeking what it really felt like to be ‘within breathing distance’ of world class athletes in the year leading up to the winter Olympics. It was, in a word &#8211; awesome!  I was very fortunate to visit this remarkable part of Canada during the World Cup ski events held there in early December of 2009. A bit of background on World Cup – it was created in 1966 between ski pals and colleagues from France and the United  States with the first World Cup Ski Race held in Berchtesgarden, West Germany on January 5, 1967.  Jean-Claude Killy of France and our very own Nancy Green of Canada were the overall winners for the first two seasons.</p>
<p>The World Cup is held annually and as this one was held so close to the quadrennial Winter Olympics, everyone</p>

<p>attending, from the athletes to the supportive fans, was highly energized.  The sun shone while the temperatures held around a cool -22’C – the snow conditions were good, and the world class accommodations at the fabulous Fairmont Chateau Lake Louise were the proverbial cherry on top! The vibe in and around Lake Louise was infectious.  If you are ever able, I highly recommend attending a World Cup ski event, especially here because if you love to ski, this is the ‘birthplace of skiing’ in Canada.  Early pioneers – in 1931 – deemed this area to be ideal for putting boards to powder so set about to build Canada’s first commercial ski operation here.  During World Cup Ski Events such as this and as felt during the 1988 Olympics, quickly it becomes very clear why this destination is so ideal for world class downhill events!</p>
<p>Interesting to note too; many athletes (World Class and Olympians) choose to stay on in the Banff Lake Louise area long</p>

<p>after their competitive careers have ended.  The outdoorsy attitude emanating throughout the community coupled with access to such beautiful scenery are great motivators.  In Lake Louise, visitors can experience a peaceful hike while admiring the winter spectacle of JohnstonCanyon – all icicles and frozen waterfalls, to guided snow shoeing on the trails surrounding The Fairmont Chateau Lake Louise, and even take in a bit of true ‘Canadiana’ on Lake Louise.  Hockey anyone?  And best of all, the skiing is a mere twenty minutes away. It’s a magical setting which offers the best of a Canadian winter getaway.</p>
<p><strong>The Resting Point</strong></p>
<p>The Fairmont Chateau Lake Louise is set against an amazing backdrop. The scenery is the key reason to the property resting as it does by the lake. Walking through the public areas and down the winding hallways of this gorgeous resort, one can’t help but think about the passion of the early builders, let alone the intrigue felt by those first adventure enthusiasts who sought out incredible experiences in such a dramatic environment.</p>
<p>At almost every turn, there are spectacular photographs dressed with fascinating stories of who was <img class="alignleft size-medium wp-image-6409" title="cllexterior" src="http://www.getawaybc.com/wp-content/uploads/2010/01/cllexterior2-300x198.jpg" alt="cllexterior" width="300" height="198" />here in the beginning. Dating back to its humble start in 1890 with the Canadian Pacific Railway, to its position of prominence through the mid 1900s – hosting Kings and Queens of country and Hollywood fame, this iconic hotel jewel is a mighty special place at which to holiday.</p>
